WHEY MINERAL SEPARATOR 40% - WHAT IS? 40% demineralized whey powder is a byproduct of the milk production process, separated from the whey component of milk. With a mineral separation rate of 40%, this product contains a certain amount of minerals and proteins. Uses: Whey powder is used as an ingredient in the processing and production of many foods, from chocolate and sugar confectionery, bread, soups and sauces, baby food, etc., with many different types used in different foods. The standard whey powder product is an anhydrous whey powder made from sweet whey, a by-product of cheesemaking that is not overly acidified, and a pH of 6,3–6,5 (e.g. emmental and gruyere production). Sweet whey is evaporated to 60–70% solids to supersaturated lactose and cooled rapidly to 30°C, at which point a-lactose crystals form. Further cooling to 15°C causes the conversion of β-lactose to a-lactose and about 75–80% lactose crystals. The whey concentrate can then be spray dried. Part of the lactose (up to 20%) remains in an amorphous, hygroscopic state. Storage: To best preserve the product, you should keep it in its original packaging and store it in a cool, dry place and away from direct sunlight. 40% demineralized whey powder can also be stored in the refrigerator if you want to use it long term. Make sure the product is tightly sealed and used within 2 months after opening the package.
